The Mediterranean 'fried sauce', typical sauce base with many dishes are prepared, having a high concentration of polyphenols that are beneficial for cardiovascular health, as highlighted by a study published in the journal Food Chemistry has led Professor Rosa Maria Lamuela, head the Antioxidants Research Group of the Universitat de Barcelona (UB) and member of the Centre for Biomedical Network Research on Pathophysiology of Obesity and Nutrition (CIBERobn).
